  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 1 cup sweet corn (fresh or frozen)
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper; sauté until cooked through (about 6-8 minutes). Remove and set aside.
  3. In the same skillet, add broccoli and sauté for 3-4 minutes. Add sweet corn and minced garlic; stir for another minute.
  4. Lower heat, stir in heavy cream and Italian seasoning; simmer for 2-3 minutes before adding Parmesan cheese until melted.
  5. Toss pasta and chicken with the sauce until well-coated. Serve garnished with parsley.
