- 1 pound boneless, skinless chicken breasts, cubed
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 red bell pepper, chopped
- 1 can diced tomatoes (14.5 ounces)
- 1 cup chicken broth
- Olive oil, salt, pepper, and Italian seasoning
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken pieces seasoned with salt and pepper; cook until no longer pink (5-7 minutes). Remove and set aside.
- In the same skillet, brown the sausage for about 5 minutes.
- Add onion and red bell pepper; sauté until softened (4-5 minutes). Stir in garlic for another 30 seconds.
- Return chicken to the skillet. Add diced tomatoes, chicken broth, and Italian seasoning. Simmer for 5 minutes.
- Toss cooked pasta into the skillet to coat with sauce. Serve hot with optional fresh basil or Parmesan cheese.
