  • 1 cup brewed coffee (cooled)
  • 2 tablespoons coffee liqueur (optional)
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2430 ladyfingers (savoiardi)
  • 1 cup cherry pie filling or fresh cherries
  • Cocoa powder for dusting

Instructions

  1. In a shallow dish, combine cooled brewed coffee and optional coffee liqueur.
  2. In a large bowl, beat mascarpone cheese, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  3. Quickly dip each ladyfinger into the coffee mixture and arrange half in a 9×9-inch dish.
  4. Layer half of the mascarpone mixture over ladyfingers, followed by half of the cherry filling. Repeat layers with remaining ingredients.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
