- 1 pound potatoes, peeled and diced
- 1 cup diced ham
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened. Add garlic and cook for an additional 30 seconds.
- Pour in chicken broth and add potatoes, ham, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Blend part of the soup using an immersion blender or transfer to a regular blender until smooth; return to pot.
- Stir in heavy cream and shredded cheddar until melted.
