  • 1 pound potatoes, peeled and diced
  • 1 cup diced ham
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened. Add garlic and cook for an additional 30 seconds.
  2. Pour in chicken broth and add potatoes, ham, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  3. Blend part of the soup using an immersion blender or transfer to a regular blender until smooth; return to pot.
  4. Stir in heavy cream and shredded cheddar until melted.
  5. Serve hot, garnished with fresh parsley.
