  • 6 medium potatoes, thinly sliced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Dried thyme
  • Paprika

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken with salt, pepper, garlic powder, and onion powder.
  2. In a skillet with olive oil over medium-high heat, sear chicken for 3-4 minutes on each side until golden brown. Set aside.
  3. In a greased baking dish, layer sliced potatoes at the bottom; season lightly.
  4. Place seared chicken atop the potatoes. Mix sour cream, chicken broth, thyme, and paprika in a bowl and pour over the chicken and potatoes.
  5. Top with shredded cheddar cheese.
