  • 1 pound boneless, skinless chicken breasts
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Cook chicken for 5-7 minutes on each side until golden brown. Remove from skillet and slice.
  3. In the same skillet, toast rice for 1-2 minutes; add chicken broth and bring to a boil. Cover and simmer for 15 minutes.
  4. Add broccoli on top of rice without stirring, cover again, and cook for another 5 minutes until tender.
  5. Stir in garlic powder, onion powder, cheddar cheese, and cream cheese until melted. Fold in sliced chicken.
