  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. In a mixing bowl, whisk together flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, mix milk, eggs, vanilla extract, and melted butter. Combine wet and dry mixtures until just mixed.
  3. Heat oil in a deep fryer or pot to 350°F (175°C). Fry spoonfuls of batter for about 2–3 minutes on each side until golden brown. Drain on paper towels and cool completely.
  4. For the crème brûlée custard: Heat heavy cream with vanilla in a saucepan. In another bowl, whisk egg yolks with brown sugar. Gradually add warm cream mixture to egg yolks while whisking continuously. Cook over low heat until thickened; let cool.
  5. Fill cooled donuts with crème brûlée custard using a piping bag.
  6. Spread granulated sugar on a heatproof surface and use a kitchen torch or broiler to caramelize the sugar before serving.
