  • 2 cups cooked chicken, shredded

  • 1 teaspoon ground black pepper
  • 8 ounces fresh mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon dried thyme
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Cut tops off bread rolls and scoop out insides to create bowls.
  2. In a skillet, warm shredded chicken with salt and pepper over medium heat.
  3. Sauté onions in olive oil until softened. Add mushrooms until browned; then stir in garlic and thyme.
  4. Combine sautéed vegetables with chicken and cheeses in a mixing bowl.
