  • 1 lb dried navy beans
  • 1/2 lb salt pork (or diced bacon)
  • 2/3 cup molasses
  • 1/4 cup brown sugar
  • 2 tsp Dijon mustard
  • 1 large yellow onion, diced
  • Kosher salt and pepper to taste

Instructions

  1. Pick and soak the beans overnight in cold water with kosher salt.
  2. Drain the beans and simmer in fresh water for 30-45 minutes until tender.
  3. Preheat your oven to 250°F (121°C).
  4. Score the salt pork and sear it in a Dutch oven until golden brown.
  5. Layer the drained beans and diced onion around the pork in a bean pot.
  6. Mix molasses, brown sugar, mustard, salt, and pepper in a bowl; pour over the beans.
  7. Add reserved bean liquid until just covered; cover and bake for 6-8 hours.
