Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups water
- 2 carrots, peeled and sliced
- 2 stalks celery, sliced
- 1 medium onion, quartered
- 2 cloves garlic, smashed
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 cup green beans, trimmed
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper and place them in a large pot.
- Pour in the water and add carrots, celery, onion, garlic, bay leaf, and thyme. Bring to a boil over medium-high heat.
