Ingredients

  • 1 sheet puff pastry
  • 50g sugar
  • 20g cornstarch
  • 15g all-purpose flour
  • A pinch of salt
  • 250ml milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 1 tsp butter
  • 1 egg yolk mixed with 1 tbsp milk (for brushing)
  • Fresh blueberries
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 190°C (374°F) and line a baking sheet with parchment paper.
  2. Cut rings from the puff pastry using a pastry cutter; create smaller holes in half of them.
  3. Layer the smaller rings on top of the larger ones and brush with an egg yolk-milk mixture.
  4. Bake for 20 minutes until golden brown, then cool completely.
  5. For the vanilla cream, heat most of the milk in a saucepan; mix remaining milk with egg yolks, sugar, cornstarch, and salt.
  6. Gradually mix hot milk with the egg mixture, cook until thickened, then stir in vanilla extract and butter.
  7. Once cooled, fill each pastry ring with vanilla cream and top with fresh blueberries.
