  • 3 Tbsp white sugar
  • 3 Tbsp flour
  • 1 lemon (zested and juiced)
  • 1 store-bought pie shell
  • 1 cup brown sugar
  • 3/4 cup flour
  • 3/4 cup rolled oats (quick cooking)
  • 1 tsp cinnamon
  • 1/2 cup cold butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the store-bought pie shell in a 9-inch pie plate using pie weights to prevent puffing.
  3. Zest and juice half of the lemon, then combine in a bowl with blueberries, sugar, flour, lemon zest, and lemon juice.
  4. Pour the blueberry mixture into the prepared pie shell.
  5. For the topping, mix cold butter with brown sugar, flour, oats, and cinnamon until crumbly.
  6. Spread the crumble topping over the blueberry filling evenly.
  7. Bake for 55–65 minutes until golden brown and bubbly.
