  • ¾ cup unsweetened cocoa powder

  • 1½ teaspoons baking soda

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 ounces) Morello cherries, drained and juice reserved
  • 3 cups heavy whipping cream
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased and floured 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract; beat on medium speed for about 2 minutes. Gradually stir in boiling water until smooth.
  4. Divide the batter evenly between the two pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  5. Once cooled, slice each cake horizontally in half. Reserve cherry juice after draining cherries.
  6. In another bowl, whip cream with powdered sugar and vanilla until stiff peaks form.
  7. Assemble the cake by layering: moisten each layer with cherry juice, spread whipped cream, add cherries, and repeat until all layers are stacked.
  8. Finish by covering the entire cake with whipped cream and garnish with chocolate shavings.
