Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 3 large carrots, sliced
- 2 large potatoes, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- Fresh parsley for garnish
Instructions
- Season the beef with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat and sear the beef until browned on all sides. Set aside.
- In the same pot, sauté the onion for 3-4 minutes until softened. Add garlic and cook for another minute.
- Return the beef to the pot and add beef broth, tomato paste, Worcestershire sauce, carrots, potatoes, thyme, rosemary, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour.
- Remove bay leaf before serving and garnish with fresh parsley.
