  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 3 large carrots, sliced
  • 2 large potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • Fresh parsley for garnish

Instructions

  1. Season the beef with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat and sear the beef until browned on all sides. Set aside.
  2. In the same pot, sauté the onion for 3-4 minutes until softened. Add garlic and cook for another minute.
  3. Return the beef to the pot and add beef broth, tomato paste, Worcestershire sauce, carrots, potatoes, thyme, rosemary, and bay leaf. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 hour.
  5. Remove bay leaf before serving and garnish with fresh parsley.
