  • 1 ½ pounds chicken thighs
  • 1 tablespoon olive oil
  • 3 teaspoons minced garlic
  • 8 ounces baby bella mushrooms
  • 2 cups balsamic vinegar
  • ⅓ cup brown sugar
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 375°F and grease a rimmed sheet pan.
  2. Toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper.
  3. In a skillet over medium-high heat, melt butter and add honey. Brown the seasoned chicken for 1-2 minutes on each side.
  4. Toss mushrooms with melted butter, remaining garlic, salt, and pepper; add to the baking pan with the chicken.
  5. Bake for about 15 minutes until the internal temperature reaches 165°F.
  6. While baking, prepare the balsamic glaze by simmering vinegar and brown sugar until thickened.
  7. Drizzle the glaze over chicken and mushrooms before serving.
