  • 1 rack baby back pork ribs (about 2 pounds)
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/3 cup bourbon (optional)
  • 3/4 cup ketchup
  • 2 tablespoon dark brown sugar (light ok too – or maple syrup)
  • 2 tablespoon apple cider vinegar
  • 3/4 tablespoon onion powder
  • 3/4 teaspoon garlic powder (or 1 minced garlic clove)
  • 3/4 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup diced fresh peaches (about 4 small peaches)

Instructions

  1. Preheat your oven to 300°F (149°C).
  2. Mix smoked paprika, chili powder, garlic powder, brown sugar, and salt in a bowl to create the rub.
  3. Prepare the ribs by rinsing and drying them, removing the silver skin, and applying the rub generously.
  4. Wrap each rib section in foil and place in a baking pan; bake for about 2 hours until tender.
  5. While the ribs bake, make the BBQ sauce by simmering bourbon (if using), ketchup, brown sugar, apple cider vinegar, onion powder, garlic powder, Worcestershire sauce, Dijon mustard, and diced peaches in a saucepan for about 15 minutes.
  6. Preheat your grill to medium-high heat. Once the ribs are done baking, brush them with BBQ sauce and grill for 4–6 minutes on each side until charred.
