  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 12 Scotch bonnet peppers (whole)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons fresh thyme
  • 2 green onions (sliced)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, marinate chicken thighs with curry powder, salt, black pepper, paprika, and allspice. Let sit for at least one hour or overnight.
  2. Heat vegetable oil in a large pot over medium heat. Sauté chopped onions until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Add marinated chicken to the pot and sear on all sides until browned (about 5-7 minutes).
  4. Stir in whole Scotch bonnet peppers and chopped bell peppers. Pour in coconut milk and chicken broth; bring to a gentle simmer.
  5. Cover the pot and simmer for 30-40 minutes until chicken is tender.
  6. Remove Scotch bonnet peppers for less heat if desired; garnish with sliced green onions before serving.
