- 1–2 Scotch bonnet peppers (whole)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 can (14 ounces) coconut milk
- 1 cup chicken broth
- 2 tablespoons fresh thyme
- 2 green onions (sliced)
- Salt and pepper to taste
Instructions
- In a large bowl, marinate chicken thighs with curry powder, salt, black pepper, paprika, and allspice. Let sit for at least one hour or overnight.
- Heat vegetable oil in a large pot over medium heat. Sauté chopped onions until translucent. Add minced garlic and grated ginger; cook until fragrant.
