Description

Apple Zucchini Bread is a delightful blend of sweet apples and earthy zucchini, creating a moist quick bread that is perfect for any time of day.


Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple (peeled)
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate the zucchini and dice the apple; set aside.
  3. In a large bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, whisk together eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until well blended.
  5. Combine wet and dry ingredients until just mixed; then gently fold in zucchini, apples, and walnuts.
  6. Let the batter rest for about 5 minutes before pouring into prepared pans.
  7. Bake for approximately 55 minutes for full loaves or 35-40 minutes for mini loaves until a toothpick comes out clean.
  8. Cool in pans on a wire rack for about 20 minutes before transferring to cool completely.
