- 2 cups grated zucchini
- 1 cup diced apple (peeled)

Instructions
- Preheat the oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
- Grate the zucchini and dice the apple; set aside.
- In a large bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
- In another bowl, whisk together eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until well blended.
- Combine wet and dry ingredients until just mixed; then gently fold in zucchini, apples, and walnuts.
- Let the batter rest for about 5 minutes before pouring into prepared pans.
- Bake for approximately 55 minutes for full loaves or 35-40 minutes for mini loaves until a toothpick comes out clean.
- Cool in pans on a wire rack for about 20 minutes before transferring to cool completely.
