  • 1 pound boneless, skinless chicken breasts (diced)
  • 3 cups cooked white rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 3 large green onions (sliced)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 large eggs (lightly beaten)
  • Seasonings: garlic powder, ground black pepper, salt to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned (5-7 minutes). Remove chicken and set aside.
  2. In the same skillet, add remaining oil and frozen vegetables; sauté for about 3-4 minutes until heated through. Stir in sliced green onions for an additional minute.
  3. Push the veggie mix to one side, pour in beaten eggs into the center, and scramble until fully cooked before mixing with vegetables.
  4. Return chicken to the skillet along with cooked rice, soy sauce, oyster sauce (if using), sesame oil, garlic powder, and black pepper. Stir-fry for about 3-5 minutes until well mixed and heated through.
  5. Taste and adjust seasoning if necessary. Serve hot.
